Vegetarian Paleo Protein Plus

If there is one thing I have a really, consistently difficult time with it is the way animals are treated in the food industry. I am not even talking about just the animals we eat! The egg and dairy industry are also notoriously horrific, also. I was vegetarian for several years followed by a vegan stint in protest to these industries.

Unfortunately, I can’t say the standards have gotten any higher. In fact, they seem to be getting worse as population rises and food production strives to meet those needs. Even more of a reason to examine your values around animals and their products. Because of this, I am always excited to learn about ways to get protein in my diet that doesn’t rely on animal sources.

So go ahead, give it a shot – an ethical and delicious PROTEIN SOURCE! This recipe was given to me by June Konopka, MS, RD

VEGETARIAN PALEO PROTEIN PLUS!

Ingredients:

12 raw, organic almonds
1/3 cup raw, organic sunflower seeds
1/3 cup raw, organic pumpkin seeds
1 Tbsp pineapple or apple juice frozen concentrate
1/3 cup filtered water

Directions:

Simply grind the nuts and seeds in a coffee grinder.
Mix the juice and water together in a separate bowl.
Add the diluted room temperature juice to the nuts and seeds.
Refrigerate overnight and Viola!

I just eat it by the spoonful but some folks have enjoyed putting it on an apple or other low-glycemic index fruit! Either way, it’s a great snack and high in protein and GOOD fats!
